		<description>Hi Tim--the yellow color in the milk fat is from the high level of nutrients.  In the spring, the fresh, green growing grass produces more of a yellow color in the butter fat in the milk.  Spring butter made from the milk is also a bright yellow.  That photo was taken last spring. I think it is the beta carotene (vitamin A).  I actually stock up on butter in the  Spring (it freezes nicely), so that I have high nutrient dense butter for the better part of the year.
