Sunny Salmon Salad

I promised to blog about some of our quick and easy meals we made this week at the beach, as we ready our Islamorada Bungalow for its first rental guests of the season.

I don’t have much time to cook, between maintenance, yard work and running errands for supplies. So simple and short, rules the day.

For one lunch, we made a yummy Salmon Salad with canned Vital Choice Salmon purchased from Ocean City Organics.  Vital Choice is a mail order purveyor of Pacific wild caught salmon and other seafood. I was delighted to find it in a store at the beach!

Here is the simple recipe:

Sunny Salmon Salad

1 can Vital Choice Salmon

3-4 TBL Sally Fallon’s Sour Cream Sauce (I made this at home and brought it to the beach)

[or you can use real mayonnaise]

1 stalk of celery, diced

1 scallion, diced

Mix and serve on a romaine lettuce leaf.

By the way, we just lowered the rental rates on the two weeks we have still open in June! Let me know if you are looking for a great beach house in Ocean City, Maryland.
