Soaked Oatmeal Pancakes with Real Maple Syrup

This is a favorite recipe in our house… I freeze leftovers and my kids almost fight over who get to take them home.   They always stay moist due to the oatmeal… great way to serve oatmeal.   and the cinnamon and vanilla make them heavenly.   They are a wonderful snack too.
Soaking over night  eliminates any anti-nutrients…

Diana’s Soaked Oatmeal Pancakes

Mix and soak overnight on counter:
2 cups oatmeal
2 cups buttermilk
½ c spelt flour ( store in freezer)
In morning, mix in:
¼ c melted butter
2 slightly beaten eggs
¼ cup water, approx, to thin batter
Then mix in:
2T sugar, opt
1 t. baking powder
1 t. soda
¼ t. salt Fry in coconut butter.
½ t. cinnamon Freeze extras.
1 t. vanilla

Janice’s Overnight Oatmeal Muffins

Mix and let sit on counter overnight:
1 1/4 cup spelt flour
1 cup oatmeal
1 cup buttermilk plus 1/4 cup water
In morning add:
¼ cup melted butter or oil
¼ tsp salt
1/3 -½ cup succanat or honey
1 egg
¼ cup applesauce
and
½ tsp soda
½ tsp baking powder
½ tsp cinnamon
1/2 cup raisens
1/2 cup nuts
Use cupcake papers and bake at 400 degrees
for about 15-20 minutes.

  1. my kids LOVE theswe – our recipie is a little different. but still all the goodness of soaked whole wheats. We do half oat/half Kamut So good with lots of butter and maple syrup!

  2. I would like to try both! Can I use grocery store whole fat buttermilk? We buy raw milk but they seldom have buttermilk available.

  3. We make these pancakes often. The recipe I have requires 4 eggs to the same proportion of oatmeal/buttermilk and flour.

    It doesn’t, however, have you soak the flour, which I will start doing next time!

  4. So do you make oatmeal first and then put it in to soak or do you use raw oats?
