Welcome back to the Weekend Gourmet blog carnival, where we share our favorite seasonal recipes with high quality ingredients from nearby farms. This weekend, I spent time in my kitchen fermenting various vegetables I gleaned from farm market stalls. Peppers, cherry tomatoes, red onion, a gorgeous cabbage, beets, all make wonderful fermenting projects!

I put in the corner cupboard (see photo at the bottom of this post), clabbered spelt, dill pickles, beet kvass (my husband’s new “red wine”), and my colorful and most favorite fermented food, salsa.

I also worked all weekend on a powerpoint presentation about lacto-fermentation and fermented foods and how we can transform our health and our food supply by doing more “home processing” of our food. I am giving this presentation in Vancouver, British Columbia, and before I leave on that trip I am doing a dress rehearsal for our local meetup group.
