For those of you who have not had the opportunity to take a class on fermented foods, here is a cool class by Scott, of Zukay Live Foods, to get you started on this fun hobby.
I have found that sprouting, fermenting, soaking and the like, turns the chore of homemaking into an art form. It is richly satisfying to add salsa to your eggs that you personally fermented in your own kitchen. And knowing that fermentation increases the vitamin content, particularly vitamin C, doesn’t hurt either!

Very cool! I’m a big fan of home fermented food, but was kind of mystified in the beginning.
