Nourishing Traditions Pancakes


HOT ON THE GRIDDLE!

This summer, I found a local farmer, Rob Moutoux, selling organic, local whole wheat berries. Using the Nourishing Traditions recipe, I first used my Vitamix blender to grind the grain, then soaked the wheat flour overnight in
buttermilk.

The pancakes were light and fluffy and delicious. We served them on this particular morning with turkey bacon and warmed maple syrup. The leftover pancakes we cooled on a rack, and then froze. They are easy to pop in a toaster for another easy morning breakfast–healthier than pop tarts and just as easy! Warm the syrup in a saucepan filled with water, put the ceramic pitcher in the saucepan and simmer until it is warmed.

    I picked up a very similar recipe off a table at our local Ottawa Lansdowne farmers’ market. The guy there mills flour from his gluten free oats right at the market. He also has the world’s best rolled oats, even rolled that morning. Great article, see you, Jill
