Facebook Recipe Makes Great Beach Fare

This week someone suggested I FAN Mother Linda’s page in Facebook. Turns out she has a great collection of recipes. I found her sprouted spelt waffle recipe on her website, motherlindas.com.

Don’t you just LOVE Facebook?  You can meet so many people from around the world, so easily! It is unbelievable for networking with others who have similar interests.

Right now, I am in Ocean City, MD, getting our Islamorada Bungalow ready for the summer rental season. I will blog this week about some of my quick and nutritious meals that we are cooking up at the beach house. By the way, we still have two weeks in June/July available for rent! One thing nice about renting a house or condo at the beach, is that with a full kitchen, you can make many meals at your “home away from home”. This saves a fortune in eating out, plus, it is so fun to set a beachy table on the back deck overlooking the water!

The other advantage is that you can bring all your grass-fed meats, raw milk, raw cheese with you when you travel. I packed lots of whole food ingredients in a cooler to make the trip. To make these waffles, I had packed spelt flour, not sprouted spelt, so I adapted the recipe to the ingredients I had on hand.

The recipe also called for yogurt, and since I brought sour raw milk with me, I thought I would soak the spelt flour overnight in the sour milk, in lieu of the yogurt called for in Mother Linda’s recipe. I also bought some awesome organic strawberries and Kerrygold butter at Ocean City Organics, so I threw those on top. So, here is my revised version!

Soaked Spelt Strawberry Waffles

You will find this to be a very versatile batter. Use it to make waffles or pancakes. Note that the ratio is 1:1:1 for spelt, baking soda, and eggs. So its easy to multiply. Makes 4 servings.

1 cup spelt flour

1 tsp. baking soda

1 egg

½ tsp. sea salt

1- 1½ cups sour milk

Combine the spelt and sour milk in a medium bowl and soak overnight.

The next morning, add to the spelt mixture, baking soda and sea salt and stir to incorporate. Beat the egg in a measuring cup and add to mix. Gently stir to incorporate. Do not over stir. Butter the surface of a heated waffle iron and add mixture. Cook until done.

Top with cut-up strawberries. Serve with butter and maple syrup.

 

This is a wonderfully nutty tasting waffle, with no nuts in the ingredients. You will love it!

    Hi, can I use cultured buttermilk instead of sour milk?

    Good post! I plan to move into this stuff after I’m done with school, as most of it is time consuming. It’s a great post to reference back to. My blog needs more time to gain in popularity anyway.

    I made this recipe today, using clabbered milk and whole wheat flour. The waffles were delicious. I used uncured bacon grease on the waffle iron and broke up the bacon into the waffle iron before pouring the batter on it. YUM. Lightest whole wheat waffles ever, due to soaking the flour overnight on the counter.
