Santa Comes to Kimberly & Keith's Home

The two feet of snow that fell in our area this past week, left some beautiful icicles hanging from our roof, you can see them behind Santa in this picture. Keith had just put red and green light bulbs in our outdoor spotlights, so they were lit just beautifully and provided a wintry backdrop to our lifelike Santa and tree!

Yesterday, the day after our big holiday feast with the family, I decided to do something a little different with our turkey leftovers. This is a great way to cut the carbs by eliminating the bread and stuffing in your traditional turkey sandwich made from holiday leftovers. Here is my recipe that was easy and elegant:

Turkey Cheese Melt

Put thinly sliced white meat turkey in the bottom of a pie plate or individual oven safe serving dish. Dot with honey butter (mix soft butter and honey together to make your own). Add a few sprigs of cilantro. Grate some cheese and cover the other ingredients. Dollop cranberry sauce on top (make your own by cooking fresh cranberries and sweeten with maple syrup and stevia to reduce the sugar content).

Heat in 350 degree oven until cheese is melting and butter is bubbling (About 15-20 minutes).

Remove and serve with bread and butter (ours was a sourdough rye dinner roll bought from the Smart Markets farmers market in Oakton. The baker specializes in gluten free and what she calls pre-biotic baking. She is a brand new member of Weston A. Price Foundation, too!)

    Robin, I just added the hyperlink for the Smart Markets a non-profit which runs the Oakton farmers market on Saturdays. It is a year round market and has wonderful local foods. Enjoy!

    Enjoy glorious turkey. there is so much to see and do on a turkey holiday. where asia meets europe this vast and beautiful country.Turkey is a rapidly modernizing country with a blend of custom and tradition with new thought. Its people are friendly and accommodating and its the cities are full of majestic old buildings. There are a variety of things to see and do in Turkey, like aqua sports, mountain trekking, archaeology, night clubbing, etc.

    We used up the last of our Thanksgiving turkey last night in tetrazzini. I still have three quarts of turkey stock though!
