Two Easy Ways to Include Avocado in your Breakfast Meal

Avocado Schmear on Toast

This weekend, Keith and I packed up a cooler and headed to the beach. This time of year is maintenance time on our beach rental! Once we arrived, and Keith unpacked the cooler, he noticed we had forgotten to pack the butter.

“Oh, no,” he cried, “What am I going to have on my toast?” I assured him that bacon grease would suffice, but that is quite a change in his mind from the beautiful, yellow farm fresh butter that he normally slathers on. The reason I thought of bacon grease, immediately, is that my friend, Vija’s parents used to smear lard on their toast. Both her parents are skinny and strong, so I figured their traditional diet of lard on their toast was a health benefit. Did you know that lard from pasture raised pigs is high in vitamin D? The bacon we buy is from forest fed pigs, so I knew it would be a healthy fat.

Since Keith wasn’t too keen on that idea, I then offered up a schmear of avocado as an alternative. He jumped on that idea, since we often make scrambled eggs with chopped avocado, and he likes that.

We are now back from the beach, and this morning I used the rest of the avocado to make an omelet. Here is the recipe.

Avocado and Spring Onion Omelet with Bacon

Gourmet Recipe with Only a Few Ingredients!

Serves 2

4 Farm Fresh Eggs

1/2 teaspoon water

2/3 of an Avocado

1 spring onion

3 pieces of bacon

bacon grease (leftover from frying the bacon to accompany the meal)

Pour Bacon Grease Through a Sieve into the Drippings Jar

Fry the three pieces of bacon in a skillet. When done on both sides, remove bacon to a plate covered with a paper towel and move to a warm oven where your breakfast dishes are warming (serving the meal on warm plates keeps your breakfast hot longer!). Pour off most of the bacon grease into a drippings jar for future use.

 

Add chopped spring onion to the skillet and cook 3-4 minutes.

Crack and scramble the 4 eggs and add 1/2 teaspoon of water.

Pour scrambled eggs over the onion. Cook on low heat until the omelet is almost done another 3-4 minutes. Add chopped avocado, and flip one side of the omelet over top of the avocado. Cook until the eggs are done and the avocado is warm, another 2 minutes.

Serve.
